Homemade Lasagna with Meat Sauce

I would like to share my lasagna recipe with you. I have been making this for years. It is my go-to dish for a meal for families who are in need of a couple of meals. I say a couple because there are plenty of leftovers.

You will need:

1 pound ground beef

1 small onion

1 28 ounce can tomatoes

1 12 ounce can tomato paste

1 tablespoon sugar

1 1/2 teaspoon salt

1/2 teaspoon oregano leaves

1/2 teaspoon thyme leaves

1/2 teaspoon crushed red pepper

1/4 teaspoon garlic powder

1 bay leaf

16 ounce package lasagna noodles

1 15 ounce container ricotta cheese

1 16 ounce package grated mozzarella cheese

In a 5 quart Dutch oven over high heat, cook ground beef and onion until pan juices evaporate and beef is browned.  If there is any fat left in the pan, drain the liquid.

Add tomatoes and their juices. I often add fresh tomatoes as well.

Add one tablespoon of sugar. Yes, sugar! It helps cut the acidity of the tomatoes.

Add 1 1/2 teaspoons of salt.

Add 1 1/2 teaspoons of salt.

Add 1/2 teaspoon oregano.

Add 1/2 teaspoon oregano.

Add 1/2 teaspoon thyme leaves.

Add 1/2 teaspoon thyme leaves.  I had ground thyme, so that is what I used.

Next, add 1/2 teaspoon crushed red pepper.

Next, add 1/2 teaspoon crushed red pepper.  You may want to cut back on this if you are making this recipe for someone who doesn’t like the extra spice; or for someone who may be recovering from surgery or a sickness.

Add 1/4 teaspoon garlic powder.

Add a bay leaf.

Heat mixture to boiling, stirring to break up the tomatoes. Reduce heat to low; cover and simmer 30 minutes, stirring occasionally.

Discard bay leaf. Tilt pan to spoon off any fat that may have accumulated on top of the sauce.

Cook lasagna noodles as package directs.

Cook lasagna noodles as package directs.  I like to add olive oil to the water to keep the noodles from sticking together. Also, I use tongs to separate the noodles in the boiling water.   Drain well in a colander.

Spray a 9×13 pan with cooking spray. Arrange half the noodles in pan so they are overlapping.

Preheat oven to 375 degrees.

In a small bowl with spoon combine 15 ounces of ricotta cheese and two eggs.

Spoon half this mixture over noodles in baking dish.

Sprinkle with half of the mozzarella and spread half of the meat sauce.

Repeat the layers.

Bake in oven for 45 minutes. Remove from oven and let stand 10 minutes before serving.

I serve my lasagna with hot, crusty garlic bread and a salad.
